Sweet Memories Recipe: Baby, it's Chili... inside!

Chili is one of those recipes that can go in many different directions!  This round we did a vegetarian version of a classic medium heat chili.

What you will need:

  • 2 cloves garlic, chopped
  • One can diced tomatoes
  • One can tomato paste
  • 2 tablespoons chili powder
  • 1 teaspoon ground cumin
  • 1 teaspoon ground oregano
  • 1 teaspoon ground turmeric
  • 1 teaspoon ground basil
  • 1 teaspoon salt
  • 1/4 teaspoon cayenne pepper
  • Your favorite veggies - this case, one white onion and a couple yellow and bell peppers from the garden
  • One 15-ounce can dark red kidney beans, drained and rinsed
  • One 15-ounce can light red kidney beans, drained and rinsed
  • One 15-ounce can black beans, drained and rinsed
  • Optional items for serving:  Hotdogs, shredded cheddar, chopped onions, tortilla chips

Chop your veggies well and add to a pan on the stove with a little olive oil, once the onion is translucent (not brown) add the garlic, diced tomatoes and tomato paste (plus a can of water if needed).  Add all the spices and mix well.  Put your beans and everything from the pan into a slow cooker and let it cook on high for 4 hrs or low for 8-10.   Once ready, let this warm you up on a cool Fall Sunday... perfect for Football parties!
